Chocolate Drinks

Hot Chocolate

• 3 cups milk

• 1/3 cup semisweet chocolate, grated

• 1 tablespoon white sugar

• 1/2 teaspoon ground cinnamon

• 1 egg

Serves 3

Put milk into a microwave-safe container and cook on High in microwave for 2 minutes. Mix in chocolate, sugar, and cinnamon. In a small bowl, whisk an egg until smooth, then mix it into the chocolate mixture. Return to microwave and cook on High for 3 to 4 minutes or until foamy (be careful not to let it boil.) Whisk until smooth and pour into 3 mugs. Garnish with a sprinkle of cinnamon if desired.

Aztec Chili Chocolate

The Aztecs were the first to serve chocolate as a drink, but they also mixed it with hot chili pepper to make a really special beverage. Try something exotic with your hot chocolate today. You can always reduce the amount of chili if it's too hot for you.

1 2/3 cups milk

1/2 vanilla bean

1 red chili pepper

1 cinnamon stick

1 1/2 oz bittersweet chocolate

Serves 2

Split red chili and remove the seeds. Also split the vanilla bean, lengthwise. In a saucepan, heat milk to simmering with vanilla bean, chili pepper and broken up cinnamon stick. Continue to simmer for a minute or two. Grate chocolate, and whisk into the hot spiced milk until melted. Remove hot chocolate mixture from heat and let sit for 10 minutes, to steep. Strain, and heat through again if necessary. Serve hot .

Mexican Hot Mocha

Hot cocoa recipe with a bit of coffee and cinnamon. You can't beat hot chocolate made with real melted chocolate, especially with the added cinnamon.

1 1/2 oz unsweetened chocolate

1/4 cup sugar 2 tbs instant coffee

1/2 tsp cinnamon

3/4 cup water 2 cups milk

Serves 2

Grate chocolate, and mix together with other ingredients (except for milk). Heat in a saucepan and simmer while chocolate melts. Stir until everything is evenly blended together. Continue to simmer and stir for about 5 minutes. Then add milk and heat through, but don't let your chocolate mixture boil. Remove from heat, and whisk until frothy. Serve hot chocolate immediately with a dollop of whipped cream, if desired.
